Designing a High Speed Commercial Kitchen (with no chaos)

A faster commercial kitchen business is not just about fitting more things into the space. This is about minimising the number of steps, reducing collisions and making it easy for staff to execute under stress.

Begin with your menu (not the floorplan)

List your top-selling dishes and then map out each one from storage to prep to cooking and serving. Your hotline is going to take up space and extraction, as the equipment used on a grill or fryer-based menu demands. If there are a lot of sandwich or salad options, you need chilled preparations and storage.

Design in zones

Avoid those slow and clumsy zones by ensuring you have a very easy-to-understand zoning approach:

Dry, chilled and frozen goods in storage near depot access

Prep: wipe clean worktops, sinks and prep area where all ingredients are within reach

Cook and prep line: segmented by use (grill, fry wells, ovens) with a safe landing space

Pass/serve to front-of-house or drivers

Wash-up: separated from food prep to avoid cross-contamination

Reduce steps and crossing paths

Items you access from your station should be kept within reach. Don’t put fridges across from the cook line if it makes chefs dodge past each other.

Build in “buffer space”

Don’t forget the boring essentials

Everything is further slowed by undersized extraction, bad lighting and convoluted waste routes. It is essential to plan power, gas, water and ventilation in early stages, while piping such as sprinklers must be installed at the inception. Based on this, decide proper access routes for maintenance operations.
